PCOS Diet Chicken Chipotle & Tomato Soup

Screen shot 2013 02 28 at 11.56.01 AM PCOS Diet Chicken Chipotle & Tomato SoupI’d say this is more of a chowder and a seriously good one at that. This is a protein rich ‘stoup’ (soup-stew) so it’s perfect for a PCOS diet.

Always remember that when possible, try to get your beans, tomatoes and veggies in glass containers to cut down on environmental toxins. If you’re using regular old cans, please rinse them thoroughly and drain them.

If you can’t find or don’t like chipotle chiles, substitute the smoky flavor with about 1 tbsp paprika. To make this even easier on the tummy and creamier going down I add a dollop of Greek yogurt. Try it and I know you’re going to love it!

Prep Time: 15 mins

Cook Time: 30 mins

Yields: 5 servings

Ingredients:

1/2 tsp cumin
1 can navy beans, thoroughly rinsed and drained
14 oz can all-natural stewed tomatoes
14 oz low-sodium organic chicken broth
1 chipotle chile, chopped fine
2 cups organic, boneless, skinless chicken breasts, boiled and shredded
1 tbsp EVOO
1/2 cup Greek yogurt (optional)
1/4 cup fresh cilantro, chopped

Directions:

If you haven’t already, completely cook your chicken by boiling it and shred it after cooled. Combine first 5 ingredients in a large saucepan and bring to a boil. Simmer it for 10 minutes. While waiting, partially mash tomatoes and beans with a potato masher and add to saucepan. Stir in chicken and cook 2 more minutes, until heated through. Remove from heat and stir in oil. To serve, top with 2 tablespoons Greek yogurt and sprinkle on cilantro. ENJOY!
