PCOS Diet Cranberry Orange Oats

Screen shot 2013 02 28 at 12.19.52 PM PCOS Diet Cranberry Orange OatsThis has got to be my absolute favorite PCOS diet breakfast. My sweet and beautiful mother-in-law share a love for anything cranberry. If you add oranges, it’s even better! This one is for her!

There’s just something about the tart and sweet combination that is simply delicious. Cranberries are loaded with antioxidants and you’ll get your daily recommended amount of vitamin C from this dish. Enjoy!


Prep Time: 5 mis

Cook Time: 25 mins

Yields: 2 servings


Cranberry Sauce
2 cups fresh or frozen cranberries
2 tbsp pure maple syrup
1 tbsp cornstarch
½ tsp ground ginger
1/3 cup water

3 cups water
1 cup unsweetened milk
1 tbsp all-natural butter
1 cup steel cut oats
¼ tsp salt
Orange for zest and juice


Begin with the cranberry sauce and combine all ingredients in a saucepan and bring it to a boil over medium heat. Stir constantly for about 3-6 minutes, until cranberries pop. You want the sauce to thicken and turn red.

Next, prepare the oats by bringing the water and milk to a simmer. Then, add the butter. Stir the oats into the water/milk mixture and simmer on low until mixture is very thick, about 20 minutes. Stir in the salt, orange zest and juice.

To serve, pour oatmeal into bowls and top with cranberry sauce. You can make it creamier by adding a dollop of Greek yogurt and some pecans. Enjoy!
