PCOS Diet Friendly Hush Puppies

Screen shot 2013 02 28 at 11.53.18 AM PCOS Diet Friendly Hush PuppiesThese were one of my favorite foods that I had to give up temporarily in keeping with my PCOS diet. I couldn’t handle the gluten in them and so went on a mission to find a way to enjoy them.

Yes, they’re fried and YES they’re good! They’re dairy and gluten-free making them PCOS friendly. These cuties are meant to be enjoyed on occasion. Whole grains and veggies, lean proteins and fruit should be the majority of your meals.

So, when you’re feeling like you just have to have a hush puppy, have at it!

Prep Time: 15 mins

Cook Time: 15 mins

Yields: 4 servings

Ingredients: 

1 cup Organic Yellow Corn Meal
1/2 tsp salt
1/2 tsp baking powder
2 tbsp minced onion
1/4 cup almond milk
1 egg
4 tbsp EVOO

Directions:

Mix together dry ingredients.

Beat milk, egg and onion together.

Add liquid mixture to the dry ingredients and mix well. Form into small balls.

Deep fry in hot EVOO until golden brown on all sides. Let drain on a paper towel and enjoy hot!
